“Old Fashioned Banana Cobbler”

  • â–¢4-5 large ripe bananas see notes
  • â–¢1/2 cup brown sugar
  • â–¢1 teaspoon vanilla
  • â–¢1 teaspoon cinnamon
  • â–¢1/4 teaspoon of nutmeg
  • â–¢8 tablespoons butter
  • â–¢1 cup all purpose flour spoon and leveled
  • â–¢1/2 cup granulated sugar
  • â–¢1 1/2 teaspoons baking powder
  • â–¢1/4 teaspoon salt
  • â–¢3/4 cup milk
  • â–¢Caramel sauce

Instructions 

  • Cut the banana into 1/2 inch slices and set aside.
  • In a large bowl, add the bananas, brown sugar, vanilla, cinnamon, and nutmeg and stir until the bananas are well coated. Set aside.
  • Preheat the oven to 350 degrees place the butter into a 12 inch skillet or baking dish and put the dish in the oven while its preheating to melt the butter.
  • While the butter is melting, get a large bowl and add the flour, sugar, baking powder, salt and milk, whisk until combined.
  • Once the butter is melted, remove the skillet/baking dish from the oven and pour the batter into the pan ( the butter will come over the edges of the batter and that’s ok).
  • Spoon the banana mixture evenly over the batter. Do NOT stir!
  • Bake for 40-45 minutes. Let rest 10 minutes and serve with ice cream, whipped cream or a drizzle of caramel sauce.

Notes

  • You want to have extra ripe bananas for optimal sweetness.
  • If you like a little texture, sprinkle chopped pecans or walnuts on top before baking.
  • Store leftovers in the fridge for up to 4 days.
