Equipment
- â–¢1Â Cast Iron Skillet
Ingredients 1x2x3x
- ▢4-5 large ripe bananas see notes
- ▢1/2 cup brown sugar
- ▢1 teaspoon vanilla
- ▢1 teaspoon cinnamon
- ▢1/4 teaspoon of nutmeg
- ▢8 tablespoons butter
- ▢1 cup all purpose flour spoon and leveled
- ▢1/2 cup granulated sugar
- ▢1 1/2 teaspoons baking powder
- ▢1/4 teaspoon salt
- ▢3/4 cup milk
- â–¢Caramel sauce
Instructions
- Cut the banana into 1/2 inch slices and set aside.
- In a large bowl, add the bananas, brown sugar, vanilla, cinnamon, and nutmeg and stir until the bananas are well coated. Set aside.
- Preheat the oven to 350 degrees place the butter into a 12 inch skillet or baking dish and put the dish in the oven while its preheating to melt the butter.
- While the butter is melting, get a large bowl and add the flour, sugar, baking powder, salt and milk, whisk until combined.
- Once the butter is melted, remove the skillet/baking dish from the oven and pour the batter into the pan ( the butter will come over the edges of the batter and that’s ok).
- Spoon the banana mixture evenly over the batter. Do NOT stir!
- Bake for 40-45 minutes. Let rest 10 minutes and serve with ice cream, whipped cream or a drizzle of caramel sauce.
Notes
- You want to have extra ripe bananas for optimal sweetness.
- If you like a little texture, sprinkle chopped pecans or walnuts on top before baking.
- Store leftovers in the fridge for up to 4 days.
