Herb Butter
- ▢1/2 cup unsalted butter softened
- ▢2 teaspoons fresh chopped parsley
- ▢2 cloves garlic minced
- ▢1/2 teaspoon lemon zest
- ▢1/2 teaspoon salt
For the salmon
- ▢4-6 ounce salmon filets
- ▢2 tablespoons olive oil
- ▢1 teaspoon kosher salt
- ▢2-3 tablespoons Italian seasoning
- â–¢Fresh parsley chopped
- â–¢Lemon slices
Instructions
- In a small bowl mix the butter, parsley, garlic, lemon zest and salt until combined.
- Place the butter mixture on a piece of plastic wrap and roll and twist the ends, chill in the freezer for 3-5 minutes.
- Pat dry the salmon filets with a paper towel and season the filets with salt and Italian seasonings evenly.
- Heat a cast iron skillet on medium-high heat and add the olive oil. Place the salmon flesh side down into the skillet, and cook for 3-4 minutes.
- Gently flip the salmon filets and place a slice of the herb butter on top of the salmon to melt cook another 2-3 minutes or until the internal temperature reaches 130 degrees.
- Serve with extra herb butter, fresh chopped parsley and lemon slices.
Notes
Atlantic or wild-caught salmon with the skin on.
The best pan is a cast-iron skillet or stainless steel pan as it conducts heat evenly. A nonstick skillet will work too but it doesn’t get as hot so the skin won’t get as crispy.
Use a meat thermometer to know when the salmon has reached 125-130 degrees for medium or 145 degrees for well done.
