Ingredients

1 lb ground beef
1/2 each red and green bell pepper, diced
1 yellow onion, diced
3-4 garlic cloves, minced
15 oz can of chili beans
14.5 oz can of fire roasted diced tomatoes
4 oz can of diced jalapeños or chilies
8 oz sharp cheddar, grated
8 oz pepper jack, grated
1 bag Fritos corn chips, any flavor
→ Seasonings
1 tbs garlic powder
1 tbs onion powder
1 tbs chili powder
1 tbs salt
1 tbs black pepper
1 tbs cumin
1 packet sazon seasoning mix
1 tbs Slap Ya Mama Cajun seasoning (optional)
Steps
Preheat the oven to 400°F (200°C).
In an oven-safe skillet over medium heat, brown the ground beef with the onion, diced peppers, and minced garlic. Drain the grease.
Stir in the seasonings, followed by the tomatoes, chili beans, and diced jalapeños. Mix until combined.
Spread the grated sharp cheddar and pepper jack evenly over the mixture.
Bake in the preheated oven for 15-20 minutes, or until the cheese is golden brown and bubbly.
Top with as many Fritos corn chips as desired. Optionally, add additional toppings to serve.
Tips
- If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding cheese.
- For serving, leave the Fritos off and serve separately for topping as desired.
- To serve at parties, use individual bags of Fritos and create walking tacos.
