Ingredients

1½ cups fresh broccoli florets
1 cup shredded Colby cheese
1 cup shredded Cheddar cheese
4 oz Velveeta, cut into small cubes
½ tsp crushed red pepper flakes
→ Dredging and Coating
2¼ cups Panko breadcrumbs, divided
1 egg, lightly beaten
½ cup all-purpose flour
2 eggs, lightly beaten

Vegetable or canola oil
Steps
Steam the broccoli until soft, then allow it to cool slightly.
Finely chop the broccoli and place it in a bowl. Add cheese, red pepper flakes, part of the Panko breadcrumbs, and one egg. Mix thoroughly.
Scoop 1-2 tablespoons of the mixture and form into balls. Refrigerate for one hour to set.
Prepare three bowls: flour in one, eggs in the second, and the remaining Panko breadcrumbs in the third.
Heat oil to 375°F in a large skillet, using a thermometer to ensure the correct temperature.
Coat each ball by rolling it in the flour, then egg, and finally the Panko breadcrumbs.
Fry in batches, ensuring space between each ball. Cook for a few minutes on each side until the breading is golden brown.
Place the fried balls on a paper towel-lined tray to drain. Serve warm.
