Steps
Preheat oven to 375°F (190°C).
Cook the breakfast sausage in a large pan on medium-high heat for 4-5 minutes or until browned well, breaking it apart as you cook it. Remove and drain the fat.
Add one tablespoon of butter to the pan on medium heat. Whisk 10 eggs with 1/4 cup of milk, salt, and pepper, then add the mixture to your pan. Scramble the eggs until just set.
In a 9×13-inch pan, line the first 6 slices of Texas toast and top each slice with a piece of American cheese.
Add the cooked sausage and scrambled eggs on top of the bread layer, and then top with another layer of American cheese.
Mix the remaining 8 eggs, 3/4 cup of milk, and ground mustard in a medium bowl. Pour the mixture gently over the layered ingredients in the 9×13-inch pan.
Top with the remaining slices of Texas toast.
Melt the remaining 3 tablespoons of butter and brush it onto the tops of the bread.
Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake for an additional 20 minutes.
