Cheesy BBQ Chicken Potatoes

Ingredients

1.5 lbs yellow potatoes, chopped into bite-sized pieces

1 tbsp olive oil

2-3 tbsp salt, pepper, and garlic seasoning blend

1 lb boneless, skinless chicken breasts, chopped into bite-sized pieces

2-3 tbsp BBQ rub, enough to coat the chicken

1 tbsp avocado oil or any cooking oil of your choice

1-2 cups BBQ sauce

2 cups sharp cheddar cheese, grated

6 slices cooked, crumbled bacon

Steps

Preheat oven to 400°F. In a mixing bowl, drizzle the potatoes with olive oil and the salt, pepper, and garlic seasoning blend. Place in an even layer in the air fryer basket and cook at 400°F for 20-25 minutes, shaking the basket once or twice during cooking.

While the potatoes are cooking, season the chicken with the BBQ rub. In a skillet over medium heat, cook the chicken in the avocado oil until fully cooked, reaching an internal temperature of 165°F.

Add the roasted potatoes and BBQ sauce to the skillet with the chicken and mix well. Transfer the mixture to an oven-safe dish, cover with grated cheddar cheese and crumbled bacon, and bake uncovered for 10-15 minutes until the cheese is melted.
