I love making this leftover turkey soup recipe around the holiday season, especially if I have meat from Thanksgiving and I’ve gotten tired of making turkey sandwiches! With a classic medley of healthy veggies and a hearty broth, this is a soup season must-try.

Ingredients Needed
- Vegetables: I use a classic combination of carrots, potatoes, onions, garlic, and celery. Feel free to toss in other vegetables as well!
- Chicken Broth: You can also use turkey stock if you can find it, but chicken stock provides a similar flavor.
- Herbs: You’ll need thyme, bay leaves, and herbes de province.
- Cooked Turkey: This recipe is a fantastic way to use up any Thanksgiving turkey leftovers, or turkey breast can be cooked and sliced or shredded.
- Egg Noodles: These are nice and hearty and work perfectly for any noodle soup!
How to Make this Slow Cooker Turkey Noodle Soup
- Step 1: In a large slow cooker, combine chopped veggies, turkey broth or chicken broth, herbs, salt, and black pepper.
- Step 2: After the soup has cooked, remove the bay leaves and the stems from the thyme leaves. Stir in the noodles and turkey, then stir and cook.
Recipe Tips
- While this is a great way to utilize leftover Thanksgiving turkey, you could also go with classic chicken instead and buy a rotisserie chicken from your grocery store.
- For other veggie options, go with peas, spinach, bok choy, kale, cabbage, or even some lentils for additional nutrition.
- If you use vegetable broth instead of chicken or turkey, you may need to add some more seasonings to the soup.
- Allow leftovers to cool and store turkey noodle soup in an airtight container. It can be kept in the fridge for 3-4 days, or frozen for up to 3 months in a freezer-safe container. If you’re freezing the soup, it’s best to do it without the noodles and add freshly cooked noodles later on.
- Use poultry seasoning or even make your own homemade turkey stock to emphasize the turkey flavor.
