
Roasted Beet Blue Cheese Towers combine sweet roasted beets with tangy blue cheese, honey, and toasted walnuts for a stunning, creamy, earthy appetizer you’ll crave year-round.
Ingredients
- 3 medium beets, peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 4 oz creamy blue cheese (or Gorgonzola), softened
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lemon juice
- 1/3 cup chopped toasted walnuts
- 1 tablespoon honey
- Fresh thyme leaves or microgreens, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss beet slices with olive oil, salt, and pepper. Arrange in a single layer on the sheet.
- Roast for 25–30 minutes, flipping halfway through, until tender and caramelized. Cool slightly.
- In a bowl, mix blue cheese, sour cream or yogurt, and lemon juice until creamy.
- On a platter, layer beet slices with dollops of cheese mixture. Stack 2–3 slices high.
- Drizzle towers with honey and sprinkle with chopped toasted walnuts.
- Garnish with fresh thyme or microgreens. Serve chilled or at room temperature.

– Use gloves when slicing beets to avoid stains.
– You can substitute goat cheese or feta if you prefer milder flavors.
– Maple syrup works beautifully in place of honey.
