Ingredients:
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
½ cup creamy peanut butter
Additional chocolate chips for topping (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-inch round pizza pan or baking sheet with parchment paper.
Prepare the Dough: In a medium mixing bowl, whisk together flour, baking powder, and salt. Set aside.
Cream the Butter and Sugars: In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
Add Wet Ingredients: Beat in the egg and vanilla extract until well combined. Gradually mix in the dry ingredients until a dough forms.
Press into Pan: Press the dough evenly into the prepared pizza pan, forming a thin, even layer. Bake for 8-10 minutes, or until the edges are lightly golden.
Cool Slightly: Remove the pan from the oven and let the crust cool for 5 minutes.
Spread Peanut Butter: Spread the creamy peanut butter evenly over the cooled cookie crust, leaving a small border around the edges.
Top with Chocolate Chips: Sprinkle the remaining chocolate chips generously over the peanut butter layer. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the chocolate chips are melted and bubbly.
Let Cool: Allow the cookie pizza to cool completely before slicing into wedges.
Serve: Slice and serve immediately, or store in an airtight container for up to 3 days.
