- 2 cups cherry or grape tomatoes halved

- 3 tablespoons olive oil

- ¼ teaspoon black pepper
- ½ teaspoon dried oregano or Italian seasoning
- 2 tablespoons fresh parsley chopped
- Optional: ¼ cup crumbled feta cheese
Instructions
- Place the sliced cucumbers, tomatoes, and red onion in a large mixing bowl.
- In a small bowl, whisk together the olive oil, vinegar (or lemon juice), salt, pepper, and oregano.
- Pour the dressing over the vegetables and gently toss until everything is evenly coated.
- Sprinkle with fresh parsley and add feta cheese if using.
- Let the salad rest for about 10 minutes before serving to allow the flavors to blend.
- Taste and adjust seasoning if needed. Serve chilled or at room temperature.
