
Golden Baked Feta Rolls with Sweet Cranberry Honey are a flaky, creamy, and slightly sweet appetizer made with phyllo or puff pastry, feta cheese, chopped cranberries, lemon zest, and a warm drizzle of honey.
Ingredients
• 8 sheets phyllo or puff pastry (thawed if frozen)
• 8 oz (225g) feta cheese, cut into 8 small rectangles
• 2 tbsp butter, melted (for brushing)
• 2 tbsp honey (for drizzling)
• 1/4 cup dried cranberries, chopped
• 1 tsp lemon zest
• 1 tbsp chopped fresh parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Slice feta into 8 small blocks. Mix chopped cranberries with lemon zest in a small bowl.
3. Place one sheet of phyllo on a clean surface. Brush with melted butter.
4. Add a block of feta and a pinch of cranberry mixture to the bottom edge. Roll tightly, folding in sides as you go.
5. Repeat with remaining sheets and filling.
6. Place rolls seam-side down on prepared baking sheet. Brush tops with more butter.
7. Bake for 20–22 minutes or until golden brown and crisp.
8. Warm honey slightly, then drizzle over baked rolls.
9. Sprinkle with parsley (optional) and serve immediately.

– Phyllo dries out quickly—cover unused sheets with a damp towel while working.
– You can substitute puff pastry for a richer, flakier result.
– Goat cheese or brie can replace feta for a creamier texture.
