Ingredients
• 1 large cucumber, cut into thick half-moon slices
• 6 oz feta cheese, cut into small cubes
• 1 cup cherry tomatoes
• ½ cup Kalamata olives, pitted
• Fresh dill or parsley, for garnish
• 2 tbsp olive oil
• 1 tsp lemon juice
• ½ tsp dried oregano
• Black pepper, to taste
Instructions
1. Rinse and dry all produce. Slice the cucumber into thick half-moons and cube the feta.
2. Thread each skewer with a cherry tomato, feta cube, cucumber slice, and olive.
3. In a small bowl, whisk together olive oil, lemon juice, oregano, and black pepper.
4. Arrange skewers on a platter and drizzle with the lemon-olive oil mixture.
5. Garnish with chopped dill or parsley and serve chilled.
