Mini Pizza with Brie, Cranberries & Toasted Walnuts with a Hot Honey Drizzle

Ingredients For the Base:

4 mini flatbreads or naan

1 tbsp olive oil

For the Toppings:

200g brie cheese (sliced)

½ cup dried cranberries

½ cup walnuts (roughly chopped)

1 tsp olive oil (for toasting walnuts)

For the Hot Honey Drizzle:

3 tbsp honey

½–1 tsp chili flakes (adjust to spice level)

1 tsp lemon juice

Optional Garnish:

Fresh thyme leaves

Directions

Toast the Walnuts:
Heat a small pan over medium heat, add olive oil and walnuts. Toast for 2–3 minutes until fragrant and lightly golden. Set aside.

Prepare the Hot Honey:
In a small saucepan or microwave-safe bowl, warm the honey slightly. Stir in chili flakes and lemon juice. Let it infuse for a few minutes.

Assemble the Mini Pizzas:
Preheat oven to 200°C (400°F). Place flatbreads on a baking tray and lightly brush with olive oil. Add slices of brie evenly, then sprinkle cranberries and toasted walnuts on top.

Bake:
Bake for 8–10 minutes, or until the brie is melted and bubbly and the edges are slightly crisp.

Finish & Serve:
Remove from oven, drizzle generously with hot honey, and garnish with fresh thyme or arugula if desired. Slice and serve warm.
