
Spinach Garlic Mozzarella-Stuffed Meatballs
Ingredients:
1 lb ground beef (or half beef, )
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp salt
1/4 tsp black pepper
12–14 mini mozzarella cubes or pearls
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan, egg, salt, and pepper. Mix gently until fully incorporated.
Scoop a small portion of the meat mixture into your hand, flatten it, and place a mozzarella cube in the center.
Wrap the meat mixture around the cheese and roll into a firm meatball. Repeat with remaining mixture.
Arrange meatballs on the prepared baking sheet.
Bake for 18–20 minutes, or until golden and fully cooked through.
Serve hot with marinara sauce, pasta, or as a delicious appetizer.
