Ingredients Needed
- Cream of Chicken Soup: Creates a rich and hearty base for this casserole.
- Mayonnaise: Use real mayo.
- White Cooking Wine: Cuts through all of the savory flavors with some bright acidity.
- Seasonings: A combination of salt and black pepper, garlic powder, onion powder, and curry powder add lots of warmth.
- Cooked Chicken: Using leftover chicken or a rotisserie chicken is a great shortcut for this dish.
- Broccoli Florets: Adds some nutrition and pops of vibrant green color.
- Cheddar Cheese: I recommend using a nice sharp cheddar for the most flavor.
- Ritz Crackers: A nice buttery cracker topping pulls this casserole together.
How to Make this Broccoli Chicken Divan
- Step 1: In a large mixing bowl, combine cream of chicken soup with seasonings, mayo, and white wine.
- Step 2: Add chicken and broccoli and mix well.
- Step 3: Mix in half the cheddar cheese.
- Step 4: Spoon the chicken mixture into a prepared 9×13 casserole dish.
- Step 5: Sprinkle the other half of the cheese over top.
- Step 6: Top with crushed crackers, then bake at 350 degrees F for 40 to 45 minutes, or until bubbly and golden brown.
Recipe Tips
- Serve this casserole over rice, egg noodles, or just enjoy on its own.
- For an alcohol free version, use milk instead of the cooking wine.
- The curry powder can be omitted, but I highly recommend including it for flavor.
- Frozen broccoli can be used as a shortcut, but be sure to properly thaw it first and drain any liquid.
- Instead of crackers, you could use breadcrumbs for the topping.
- If you have leftovers, transfer to an airtight container and store in the fridge for 2 to 3 days.
