Steps
Peel, wash, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder in a large bowl.
Place the potatoes in an air fryer and cook at 400°F (200°C) for about 25 minutes, shaking the basket a couple of times during cooking.
In a large skillet over medium-high heat, cook ground beef. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika, or use a taco seasoning packet. Drain any excess grease if necessary, add 1/2 cup of water, and stir.
Keep the cooked beef on low heat in the skillet while the potatoes finish cooking.
Lay out a flour tortilla and assemble with nacho cheese, a scoop of cooked beef, taco sauce, crispy potatoes, and an additional layer of nacho cheese. Roll the tortilla into a burrito shape.
Place the assembled burritos in a skillet over medium-high heat and cook until the surface is golden brown on all sides.
