Ingredients Needed

  • Ciabatta Bread: Airy and crusty, this gives your sandwich an incredible bite.
  • Mayonnaise: Use real mayonnaise.
  • Sun Dried Tomato Spread: Takes this homemade sandwich to a gourmet level with its signature sweet and tangy flavor.
  • Sliced Deli Chicken: A convenient sandwich meat that still gives you everything you want from juicy, tender chicken.
  • Shredded Cheese: I use a combination of mozzarella cheese and Gouda cheese for this sandwich.
  • Arugula: Spinach or any leafy green will work.

How to Make this Ciabatta Chicken Sandwich

  • Step 1: In a small bowl, combine the mayo and tomato spread.
  • Step 2: Use a sharp serrated knife to evenly slice the ciabatta loaf all the way through.
  • Step 3: Spread the tomato mayo over both side of the bread.
  • Step 4: On one piece, add both kinds of cheese. On the other, layer on chicken and tip with onions. Place in the oven at 400 degrees F until cheese is melted.
  • Step 5: Add tomato slices on top of the chicken and onions. Sprinkle with some salt and black pepper to taste.
  • Step 6: Follow by piling arugula over the tomato.
  • Step 7: Place the top half over the arugula and press down gently to form your sandwich.
  • Step 8: Use your serrated knife to slice into individual pieces and serve.

Recipe Tips

  • The sun-dried tomato spread will usually be found alongside sun-dried tomatoes in the produce section.
  • If you don’t have ciabatta, focaccia bread also works fine.
  • Feel free to use other kinds of cheese like Provolone or pepper jack.
  • Instead of deli chicken, you can load up this sandwich with shredded rotisserie chicken or even used fried chicken cutlets instead.
