1½ cups cottage cheese (blended)
4 eggs
1½ cups shredded mozzarella (extra stretchy)
¼ cup grated Parmesan
2 tbsp pesto
1 cup cherry tomatoes, halved (pat dry)
Salt + pepper
Optional after baking: 1–2 tbsp balsamic glaze
Instructions (detailed):
Preheat 375°F / 190°C, grease dish.
Whisk cottage cheese + eggs + pesto + salt/pepper.
Fold in chicken + Parmesan + 1¼ cups mozzarella + tomatoes.
Top with remaining mozzarella.
Bake 28–35 min, rest 10 min.
Drizzle balsamic glaze right before serving.
