1 pound ground beef
½ cup yellow onion, diced
1 ½ cups Mexican blend cheese, shredded
2 tablespoons taco seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
10 ounces red enchilada sauce
15 ounces refried beans
1 box cheesy Mexican rice
5 flour tortillas
Steps
Prepare the rice according to the package instructions.
Heat a skillet over medium-high heat and add the ground beef and onions. Cook until the beef is fully browned with no pink remaining, then carefully drain off any excess grease.
Season the cooked beef mixture with taco seasoning, garlic powder, and onion powder. Stir in ¼ cup of enchilada sauce and mix until well combined.
Lay a tortilla flat. Spread a thin layer of refried beans across the center, add a layer of rice, then the seasoned beef mixture, and sprinkle a light amount of shredded cheese on top. Fold in the sides of the tortilla and roll tightly.
Repeat the assembly process for all tortillas. Place the burritos seam side down in a 9×13 baking dish.
Pour the remaining enchilada sauce evenly over the burritos and sprinkle with more shredded cheese.
Cover the baking dish and bake at 350°F (175°C) for 20–25 minutes, or until the cheese is melted and bubbly.
