Greek Chicken Meatballs with Homemade Tzatziki

Ingredients:

For the Chicken Meatballs:

1 lb ground chicken

1/3 cup breadcrumbs (panko or regular)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tablespoon chopped fresh parsley

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg

For the Homemade Tzatziki:

1 cup Greek yogurt

1/2 large cucumber, grated and squeezed dry

1 clove garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Directions:

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the ground chicken, breadcrumbs, red onion, garlic, parsley, oregano, salt, pepper, and egg. Mix gently until fully combined.

Roll the mixture into 1–1.5 inch meatballs and place them on the baking sheet.

Bake for 18–20 minutes, or until golden and cooked through.

Meanwhile, prepare the tzatziki by combining Greek yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper. Mix well and chill.

Serve the warm meatballs with a generous spoonful of tzatziki and extra herbs or lemon wedges if desired.
