Steps
Whisk together sour cream, salsa, lime juice, and taco seasoning in a small bowl until smooth. Set aside.
Preheat a large skillet over medium-high heat. Add ground beef and diced red onion. Cook for 6-8 minutes until beef is no longer pink. Drain excess fat, then add remaining taco seasoning and water. Cook for an additional 3-4 minutes until the liquid evaporates and the sauce thickens. Remove from heat and allow to cool to room temperature.
In a 12-cup capacity trifle dish, add chopped lettuce as the bottom layer, followed by an even layer of black beans.
Layer the corn evenly on top of the black beans, then add the cooled seasoned beef evenly on top.
Spread the reserved dressing evenly over the beef layer, followed by an even layer of halved cherry tomatoes.
Sprinkle shredded cheddar cheese evenly over the tomatoes. In a small bowl, toss diced avocado with lime juice and pile onto the center of the cheese layer.
Sprinkle chopped fresh cilantro over the avocado. Optionally, add crushed Doritos, diced red onion, sliced black olives, and tortilla chips for garnish. Serve immediately.
