1 lb ground beef
1 cup diced onions
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon chopped garlic
1 teaspoon smoked paprika
10 oz tortilla chips
2 x 10 oz cans red enchilada sauce
3 cups shredded cheddar cheese
Steps
Preheat oven to 400°F (200°C).
Add ground beef to a large skillet over medium-high heat. Stir in diced onions and cook until beef is browned and crumbled.
Add salt, pepper, chopped garlic, and smoked paprika to the skillet. Stir well and cook for another 2 minutes. Set aside.
Spray a 9 x 13-inch baking dish with cooking spray.
Spread half of the tortilla chips evenly in the baking dish. Spoon half of the cooked ground beef on top of the chips. Pour one can of enchilada sauce over the beef and chips. Sprinkle half of the shredded cheese evenly across the top.
Place the remaining tortilla chips evenly on top of the cheese. Spoon the remaining ground beef over the chips. Pour the second can of enchilada sauce on top. Finally, sprinkle the remaining shredded cheese evenly across the dish.
Bake in the preheated oven until the casserole is bubbling, approximately 20 minutes.
Remove from the oven and allow to cool slightly before serving. Enjoy your Lazy Enchiladas!
