2 lbs lean ground beef
2 eggs
1/4 cup milk
1 cup Italian seasoned bread crumbs
1/4 cup grated parmesan cheese
1 tablespoon chopped garlic
2 tablespoons dehydrated minced onion (or fresh)
1/2 teaspoon salt
1/2 teaspoon pepper

3 cups shredded mozzarella cheese
4 oz pepperoni slices (cup and char style recommended)
Steps
Preheat oven to 375°F (190°C).
Place the ground beef into a large mixing bowl. Add the eggs, milk, bread crumbs, grated parmesan, chopped garlic, minced onion, salt, and pepper. Mix all ingredients together until well combined.
Spray an 11 x 17 inch baking sheet well with cooking spray. Transfer the meat mixture onto the baking sheet and spread it out evenly. Place parchment paper over the meat and use a rolling pin to spread it evenly, leaving a small gap between the edges of the meat and the baking sheet for grease runoff.
Remove the parchment paper and bake the meatloaf in the preheated oven for 20 minutes.
After 20 minutes, remove the baking sheet from the oven. Spread the pizza sauce evenly over the top of the meatloaf. Sprinkle shredded mozzarella cheese over the sauce and distribute the pepperoni slices evenly.
Return the baking sheet to the oven and bake for an additional 10 minutes, or until the meatloaf reaches an internal temperature of 165°F (74°C).
