Ingredients

 2 lb hot breakfast sausage

1 (30-32oz) bag frozen tater tots

 1 tsp salt

 1/2 tsp black pepper

 1/4 tsp garlic powder

 1/4 tsp onion powder

1 1/2 cups shredded cheddar cheese

 1/2 cup shredded mozzarella cheese

 8 eggs

 2 cups milk

Steps

Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.

In a large skillet, cook the breakfast sausage over medium heat until no longer pink. Drain any excess fat.

In a large bowl, combine frozen tater tots, cooked sausage, and both cheeses. Toss until evenly mixed. Transfer the mixture into the prepared baking dish.

In a separate large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.

Pour the egg mixture evenly over the tater tot mixture in the baking dish.

Bake the casserole uncovered in the preheated oven for 60-70 minutes, or until the eggs are fully set.

Cover and refrigerate or freeze the casserole if not baking immediately. Thaw completely before reheating.

Tips

  1. You can make the casserole ahead of time and refrigerate or freeze for later.
  2. If baking after refrigerating, add a few extra minutes to the cooking time.
  3. To reheat after freezing, thaw the casserole completely, cover with aluminum foil, and bake at 350ºF for 30-40 minutes until heated through.
