Ingredients

 1 pound ground beef

 8 flour taco shells

 8 slices American cheese

→ Toppings

 1/4 cup pickles, sliced

 1/4 cup onion, diced

 1 cup lettuce, shredded

→ Sauce

 3/4 cup mayonnaise

 4 tsp mustard

 1 tbsp white vinegar

 2 tsp Swerve sweetener

 1/2 tsp smoked paprika

Steps

Heat your griddle or skillet over medium-high heat to prepare it for searing the beef.

In a small bowl, combine mayonnaise, mustard, smoked paprika, white vinegar, and Swerve. Stir until well mixed and set aside.

Chop and slice the onions, pickles, and lettuce. Set them aside for taco assembly.

Divide the ground beef into 8 equal portions. Place each portion on the hot griddle and smash it flat with a heavy spatula or burger press. Season with salt and pepper. Let cook for 2-3 minutes until the edges are crispy, then flip. Add shredded cheese on top and cook 1 more minute until the cheese melts.

Briefly heat each tortilla on the griddle for about 30 seconds per side until pliable and slightly toasted.

Place a cheesy smash burger on each tortilla. Top with onions, pickles, and the prepared sauce. Serve immediately.
