Ingredients

→ Apple Pie Filling

 3 apples (about 1 lb), peeled and sliced into 8 slices each

 1-2 tablespoons lemon juice

 3 tablespoons white sugar

 3 tablespoons brown sugar

 3 tablespoons cornstarch

 1/2 teaspoon cinnamon

 A dash of nutmeg

 3/4 cup water

→ Pie Crust

 1 cup (2 sticks) unsalted butter, cut into cubes and chilled

 2 1/2 cups all-purpose flour

 1 teaspoon salt

 1 teaspoon sugar

 1/4 cup ice water

 1 package refrigerated pie crust (2 crusts) (optional)

→ Filling and Topping

 1 3/4 cups apple pie filling, chopped into small pieces

 1 cup caramel sauce

 1 egg, lightly beaten

 1 teaspoon cinnamon

 1/4 cup sugar

Steps

Toss apple slices with lemon juice and set aside. In a pot, combine cornstarch, white sugar, brown sugar, cinnamon, nutmeg, and water. Stir well and bring to a boil over medium-high heat, whisking constantly. Boil for 2 minutes until thickened, then add apple slices. Reduce heat to low, cover, and simmer for 10 minutes until apples are soft but not mushy. Remove from heat, cover, and let cool. Chop apples into small pieces.

In a mixing bowl, combine flour, salt, and sugar. Cut in chilled butter using a pastry blender until the mixture resembles coarse crumbs. Gradually drizzle in ice water, 2 tablespoons at a time, mixing until the dough holds together when squeezed. Divide dough into two portions, flatten into discs, wrap in plastic wrap, and refrigerate for 1 hour. Roll each disc on a floured surface to 1/8-inch thickness, dusting with flour to prevent sticking.

Preheat the oven to 350°F. Line a baking sheet with parchment paper and spray with non-stick spray. Spread caramel sauce onto one pie crust. Distribute chopped apple filling evenly, gently pressing with your hands. Slice the second pie crust into 1/2-inch strips and create a lattice top. Use a 2.5-inch cookie cutter to shape cookies. Place onto the prepared baking sheet.

Beat egg and brush over the top of the cookies. Combine cinnamon and sugar, then sprinkle generously over the cookies. Bake for 20-30 minutes until golden brown. Remove and allow to cool slightly before serving.
