1 lb ground beef
1 egg
3 tablespoons burger seasoning
8 slices bacon
Cheddar cheese, cubed into ½” – ¾” pieces
BBQ sauce
Steps
Preheat your smoker to 350°F.
Cube cheddar cheese into ½” – ¾” cubes and set aside.
Slice bacon slices in half and set aside.
In a mixing bowl, combine the ground beef, egg, and burger seasoning. Mix until well combined.
Take 2-3 oz of the beef mixture, form a ball, and stuff a cheese cube into the center. Ensure all seams are sealed tightly.
Lay down two half slices of bacon in an ‘X’ shape. Place the meatball on top and wrap the bacon around it. Secure with toothpicks.
Place the bacon-wrapped meatballs in the smoker and cook for 30-35 minutes until the internal temperature of the meat reaches 165°F and the bacon is cooked to your liking.
For the last 5 minutes, brush BBQ sauce on top of each meatball and let it glaze with the lid closed.
Remove the bacon cheeseburger bombs from the smoker and let them rest for about 10 minutes before serving hot.
Tips
- Ensure the bacon is cooked evenly and does not burn during smoking.
