Ingredients

→ Stuffed Burgers

 2 lbs 85/15 ground beef

 2 jalapeños, diced

 1/4 sweet onion, diced

 1/2 lb cheddar cheese, cut into small cubes

 Burger seasoning, to taste

 4 brioche buns

 American cheese slices

 Spicy mayo

Steps

Preheat smoker or pellet grill to 250°F.

In a large bowl, mix ground beef, diced jalapeños, diced onion, and cubed cheddar cheese until evenly combined. Optionally, add more burger seasoning.

Divide the mixture into four portions and shape into 1/2-pound patties. Season both sides generously with burger seasoning.

Place the patties directly on the smoker and cook at 250°F until the internal temperature reaches 165°F.

In the last few minutes of cooking, top each burger with a slice of American cheese and allow it to melt.

Toast brioche buns. Spread spicy mayo on both sides, then assemble the burgers and serve immediately.

  1. Cutting the cheddar into small cubes ensures gooey pockets of cheese throughout the patty.
  2. Mix the beef gently to avoid compressing proteins and losing moisture.
  3. Smoking at 250°F allows the cheese to melt without burning the burger exterior.
